Beet-broccoli-cabbage-carrot coleslaw
I love coleslaw, not only because it’s tasty but because it is full of cancer-fighting foods! Foods that make you healthy. Here’s my latest experimental recipe that turned out great.
- 1 carrot
- 1 small beet
- 1/3 head of large cabbage
- 1 broccoli head with stalk
- 1/3 red onion
- 1/2 almonds
- 1/2 cup raisins
- juice of one lime
- 2 tblsp olive oil
- 1 tblsp rice wine vinegar
- 1 tblsp fruit vinegar, I used raspberry
- 1 tsp mustard
- dash or two of turmeric
- generous salt and pepper
- (all veggies and almonds organic!)
Coarsely chop almonds in the food processor with the “S” blade. Place in large bowl. Then change food processor to the shredder and pass through all the veggies. Before doing the broccoli stem, peel it first. Add the raisins, mix well.
Mix the dressing ingredients in a measuring cup or small bowl and whisk until well combined. Pour over all the stuff in the big bowl and mix well. Let it sit 15-30 minutes before serving.
